Food is a major part of each and every story I write.
Mainly because I want readers to feel like they’re in the story, eating and smelling the same food the characters are enjoying.
So I’ve decided to include a recipe from the fine folks of Miller’s Creek, Texas, where folks are friendly, the iced tea is sweet, and Mama Beth’s front porch beckons.
During the hot summer months, my awesome hubby and I enjoy Gracie’s (from The Way of Grace, book 3 in the Miller’s Creek novels, Christian romantic suspense) avocado salsa at least once a week. Hope you enjoy it too!
3-4 ripe avocados
1/2 bunch cilantro, finely chopped
1/2 small red onion, diced fine
1 jalapeno pepper, seeded and finely chopped
lime, to taste
kosher salt, to taste
Remove outer skin and pit of the avocado. Mash to a smooth consistency.
Finely chop the cilantro and red onion. De-seed and finely chop the jalapeno pepper.
Add these to the avocados. Squeeze lime juice over the mixture and stir together.
Add kosher salt to your particular tastes.
Serve with tortilla chips.
