Food is a major part of each and every story I write.
Why?
Mainly because I want readers to feel like they’re in the story, eating and smelling the same food the characters are enjoying.
So I’ve decided to include a recipe from the fine folks of Miller’s Creek, Texas, where folks are friendly, the iced tea is sweet, and Mama Beth’s front porch beckons.
During the hot summer months, my awesome hubby and I enjoy Gracie’s (from The Way of Grace, book 3 in the Miller’s Creek novels, Christian romantic suspense) avocado salsa at least once a week. Hope you enjoy it too!
Avocado Salsa
Ingredients
3-4 ripe avocados
1/2 bunch cilantro, finely chopped
1/2 small red onion, diced fine
1 jalapeno pepper, seeded and finely chopped
lime, to taste
kosher salt, to taste
tortilla chips
Instructions
Remove outer skin and pit of the avocado. Mash to a smooth consistency.
Finely chop the cilantro and red onion. De-seed and finely chop the jalapeno pepper.
Add these to the avocados. Squeeze lime juice over the mixture and stir together.
Add kosher salt to your particular tastes.
Serve with tortilla chips.

This Easy Sour Cream Coconut Cake is so good and keeps well in a cool place for several days. I love coconut and can’t leave this cake alone when I make it. Great cake with coffee or as a dessert your friends and family will love.
Cake
1 (18.25 ounce) box classic white cake mix with pudding in the mix
4 tablespoons butter, melted
3 eggs
1 cup sour cream
1 cup milk
1 teaspoon coconut extract
1 cup sweetened flaky coconut
Mix together all ingredients except coconut with mixer. Fold in coconut with spoon. Spray a 9 x 13 baking pan with cooking spray. Bake in preheated 350 degree oven for 35 to 40 minutes checking center to make sure it is done as ovens vary.
Frosting
3 cups powdered sugar
1 (8 ounce) cream cheese, softened
1 teaspoon coconut extract
2 to 3 tablespoons milk
1 cup sweetened flaky coconut
Mix all ingredients except coconut with mixer. Spread over cooled cake. Sprinkle on coconut.

My favorite summertime recipe is fruit salad. You use a large box of gelatin, whatever flavor you prefer, at least 4 fruits of your choice, 16 oz cool whip, and 8 oz small curd cottage cheese. Put the cottage cheese, cool whip, and gelatin in blender, then stir in the fruits.

I love trying new things. My favorite for the summer is my concoction.
Easy Peaze Nachos
Ingredients:
1 lb of Hamburger
1 cup Medium Salsa any brand
1 cup shredded cheese
Enough round tortilla chips to fill a platter
Preparation:
Brown Hamburger.
Pour off grease and add salsa.
Cook to warm salsa.
Sprinkle shredded cheese over tortilla chips and microwave to melt cheese
Place Hamburger mixture over chips then sprinkle more cheese over mixture.
Microwave again to melt additional cheese.
Serve with guacamole and sour cream.
