HAPPY THANKSGIVING! Today I’m sharing my Sweet Potato Casserole recipe. It’s so easy you can whip it up with the rest of the meal. Laken used this recipe in White Doves and I’m giving away a copy. Comment on any post dated Nov 22 – 25. Deadline Nov 27, midnight Central time:
Sweet Potato Casserole
3 cans sweet potatoes
3/4 cup coconut
1/3 cup butter (melted)
2/3 cup sugar
2 eggs
1/2 cup milk
1/3 tsp. vanilla
Stir together and pour into greased 9 x13 casserole dish.
Topping:
1 cup brown sugar
1 cup chopped pecans
1/3 cup self-rising flour
1/3 cup butter melted
Mix together and crumble over the top of sweet potato mixture. Bake at 350 for 35 minutes.
