Aunt Clara’s Glazed Doughnuts by Sherry Kyle
Aunt Clara enjoyed spending time in the kitchen, creating wonderful desserts. One morning she made doughnuts for Charles. Even though she created them totally from scratch, I took the liberty to change the recipe to make it easy for our busy lives. Yes, they are fattening, but oh so delicious! Enjoy.
What you need:
Doughnuts
1 can Homestyle Biscuits
1 quart vegetable oil
Glaze
2 cups confectioner’s sugar
1 ½ tsp vanilla extract
3-4 tablespoons hot water
What you do:
1. Heat oil in a large pot (or dutch oven) to 375 degrees. Keep the temperature consistent by using a thermometer.
2. Place paper towels on a wire rack to catch excess oil. Place paper towels under another wire rack to catch drips from excess glaze for easy cleanup.
3. Mix sugar, vanilla, and hot water until smooth. Add more or less water depending on the consistency desired.
4. Separate biscuits and cut out circles to fry as doughnut holes later.
5. Place 2 doughnuts at a time in hot oil. Flip onto each side after they turn a nice golden color, about a minute on each side.
6. Scoop doughnuts out with a slotted spoon and place on the paper toweled rack.
7. While hot, cover the doughnuts with glaze by quickly dunking each side.
8. Repeat process for the rest of the doughnuts and doughnut holes.
9. Serve warm.

I love chocolate long johns with cream inside. Yum! When I was a kid, I loved any kind of doughnut. As an adult, I’ve thought they’re just not as good as they used to be. Until, I warmed one in the microwave and remembered I like warm doughnuts. Yum!
