Hello and Happy November, this year is flying by. As we step into the holiday season with parties, gathering at church or with friends, I hope you will take time to enjoy each moment. Maybe even take time out for yourself. No guilt.
Read a book, take a hot bath, a long walk or sit by the fire to watch a Christmas special with a cup of tea and a delicious scone.
In my upcoming release, Yuletide Stalking, part of the Classified K-9 Unit continuity series, my heroine Vickie Petrov and her family own and operate a bakery in picturesque Montana. My hero, FBI agent Tim Ramsey frequents the bakery and his favorite item is the Apricot scone. Near the end of the story when Tim takes a bite of one of Vickie’s scones, he is reminded how much Vickie has come to mean to him and his heart aches to see her.
Food has such a delicious way of evoking emotions and memories of loved ones.
I love to bake on occasion, especially around the holidays. Today I’d love to share with you my gluten and dairy free version of an apricot scone. When baking with gluten and dairy free ingredients, you never know if they will be edible. But these scones are fabulous. Even my pastry chef daughter approved!
Dried Apricot Scones
Ingredients
- 2 cups Bob’s Red Mill Gluten Free 1to1 Baking flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 3/4 cup chopped dried Apricots (I use organic dried fruit which is darker in color)
- 1 1/4 cups Coconut Cream (you may have to warm slightly and whip just a bit with a handheld whisk before using as the coconut cream can solidify in the can)
- Glaze:
- Start with ½ cup powered sugar add water, adjust sugar and water to preferred consistency
Directions
Preheat oven to 425degrees. Use an ungreased baking sheet. Combine the flour, baking powder, salt, and sugar in a bowl, stirring with a fork to mix well. Add the dried fruit. Still using a fork, stir in the cream and mix until the dough holds together in a rough mass (the dough will be quite sticky). Lightly flour a board and transfer the dough to it. Knead the dough 8 or 9 times. Pat into a circle about 10 inches round. Cut circle into 12 wedges and place each piece on the baking sheet allowing 1-inch between pieces. Bake for 15 minutes, or until golden brown. Eat warm unadorned or let cool before drizzling glaze over the top.

Blueberry pie. For several years, my family lived away from home – Arkansas. My aunt, uncle, and cousins traveled where we did for work. In Illinois and then Georgia, they were the only family we had. We gathered for Thanksgiving and Christmas together and my mom always made a blueberry pie. Now we live in Arkansas, but my favorite cousins stayed in GA. Blueberry pie makes me think of those times together.

My mom always made a pumpkin pie and a pecan pie for Thanksgiving dessert and also for Christmas. Several years she also made sourdough bread and rolls. Thanks for this giveaway.
I remember my MIL making fruit cake. She used lots of pineapple and pecans. It was delicious.
I love the smell of pumpkin pie baking. Reminds me of holidays with my family. My mom would bake them ahead of time and the house smelled so great! If we smelled the pies cooking we knew that we were having company over! Friends and family were going to be visiting for the holidays!
Another of my favorite treats during the festive season is spiced apple cider warming in the crockpot. We’d mix it in the morning and turn it on low. The smell was so comforting.
My mother used to make divinity and fudge to give as gifts for Christmas. I can make fudge. Divinity is a sore spot for us. Whenever hubby and I tried to make it— it failed. We always got into an argument. The one time it turned out— the glass thermometer broke and we had to throw it out! I made hubby promise we would never try to make it again! No more arguments — at least over food! ( 48 years and counting)
My grandma made cutout cookies with dried cherries on top which doesn’t sound unique or festive, but it was the taste! They melted in your mouth and honestly tasted like Christmas! As a child I thought it was magical. How could a cookie taste like Christmas. As an adult I now realize it was love that was the special touch! Even writing this takes me back!
