JANICE’S THANKSGIVING SWEET POTATOES
I borrowed this recipe from my daughter-in-law, Janice—a great cook!
3 cups cooked or 2 large cans sweet potatoes, drained
1 cup sugar
½ cup margarine, melted
½ teaspoon salt
2 eggs
½ cup milk
1 teaspoon vanilla
TOPPING
1 cup brown sugar
1 cup chopped pecans
1/3 cup flour
1/3 cup margarine
Arrange sweet potatoes in a buttered casserole dish. Mix sugar, margarine, salt, eggs, milk and vanilla. Pour over potatoes. For the topping, stir together margarine, flour, brown sugar, and pecans. Spread over potato mixture. Bake at 350 degrees for 1 hour. — Ada Brownell
