Shrimp, Grits and Bacon
3 cups chicken broth
1 cup uncooked quick-cooking grits
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons butter
2 cups shredded Cheddar cheese
6 slices bacon
2 pounds frozen shrimp, thawed
1 ½ tablespoon lemon juice
3 teaspoons Worcestershire sauce
3 tablespoons chopped fresh parsley
7 green onions, choppe
2 garlic cloves, minced
- Place chicken broth in pot over medium-high heat. Bring to boil. Stir in grits and cook according to time on package, until thickened. Remove from heat and stir in salt, pepper, butter, and cheese.
- Dice uncooked bacon. Fry in hot skillet until crispy. Set aside bacon to drain, but leave grease in pan.
- Toss shrimp in pan with bacon grease until warmed. Stir in lemon juice, Worcestershire, parsley, green onions, and garlic, then cook 2-3 more minutes. Stir in bacon.
- Scoop grits into bowls and top with shrimp mixture.
