Jodie Bailey – Recipe for Romance – Part 2 of 2

In Compromised Identity, Army Staff Sergeant Jessica Dylan finds comfort in cooking.  It’s her coping mechanism and the way she shows love for others.  When Staff Sergeant Sean Turner crashes into her life, he challenges everything, including her love of healthy eating.  When he insists she needs his protection and shows up at her house to ensure her safety, she handles the stress by doing what she does best… taking control in her kitchen and challenging his need for comfort food with a recipe she used to make with her mother.  Turns out, the way to a man’s heart really is through his stomach.  And although danger intrudes halfway through dinner, Sean discovers he’s already falling for the woman he thought he’d never need.

Bruschetta Chicken

Bruschetta:

1 teaspoon olive oil

• 1 tablespoon balsamic
• ¼ teaspoon each of salt and pepper
• 8 Roma tomatoes, seeded and diced
• 1/3 cup fresh basil, rolled and chopped
• ¼ cup grated Parmesan

2 cloves garlic, minced

3 tablespoon vegetable oil

• 1 
lb chicken breast cutlets OR chicken breasts sliced longways and pounded thin

1 
egg, beaten

1⁄2
cup Italian breadcrumbs    

• salt and pepper to taste

• Toss together tomatoes, basil, Parmesan, and garlic. Whisk together balsamic, olive oil, salt, and pepper and toss with tomato mixture. Allow to sit for at least 15 minutes or longer, stirring occasionally.
• Heat vegetable oil over medium heat. Season chicken with salt and pepper. Dredge the chicken in beaten egg, then roll in breadcrumbs.
• Brown chicken over medium heat until golden brown and no longer pink in the middle.

Remove from heat and spoon bruschetta mixture over chicken.  Serve with buttered noodles and a side salad.
