The first time I made dinner for Dave, his little girl came along as well. Let me explain. Dave Reyes, senior pastor at New Life Fellowship in El Camino, California, discovered he had a six year old daughter he’d fathered at a less than honorable time in his life, and the child’s mother had recently died. Now he had custody of Alice.
Despite the fear that his congregation might fire him, he put his own worries aside to help me through a difficult time in my life. I floundered in a spiritual sea of uncertainty and doubt after my policeman husband had been killed in the line of duty, and Dave patiently shared the gospel with me.
Anyway, back to the dinner I made. I had to think of recipes that would appeal to a child as well as a grown man. Hope you agree with my choices. Love, Betty Ann Johnston
Chicken Noodle Casserole
1 pound dry ziti pasta
1 onion, chopped
1 pound lean ground beef
2 (26 ounce) jars spaghetti sauce
6 ounces provolone cheese, sliced
1 1/2 cups sour cream
6 ounces mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese
1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9×13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.
This recipe serves 10 so you can cut the ingredients in half if you want to make less.
Combine all the ingredients and refrigerate for several hours before serving.
1 large can mandarin oranges
1 large can diced pineapple
2 cups fresh grapes
2 cups miniature marshmallows
1 cup coconut
1-8oz. tub of Cool Whip.
Makes enough for 6 people
