Chicken Parmesan
Ingredients:
• 4 (about 8 oz each) chicken breast, fat trimmed, sliced in half to make 8
• 3/4 cup seasoned breadcrumbs (I used whole wheat)
• 1/4 cup grated Parmesan cheese
• 2 tbsp butter, melted (or olive oil)
• 3/4 cup reduced fat mozzarella cheese (I used Polly-o)
• 1 cup marinara or Filetto di Pomodoro
• cooking spray
Directions:
Preheat oven to 450°. Spray a large baking sheet lightly with spray.
Combine breadcrumbs and parmesan cheese in a bowl. Melt the butter in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb mixture. Place on baking sheet and repeat with the remaining chicken.

“Hannah, put the vegetables in the bowl for me,” Mark instructed as he put some meat into a pan.
“Okay,” she said in a sing-song voice. “Mr. Mark, do you have any kids?” Hannah asked just like she was asking someone about the weather. No cares at all of how the words might sound to the other people in the room.
Shelby’s insides shook while she waited for Mark’s answer. How did you handle a situation like this? She wanted to say something and to stop where this might end up. She didn’t want Mark to think she may have asked her daughter to ask this. On the other hand, it would be funny to see how he handled her sassy little one.
He bent down, looking Hannah directly in the eyes. “No, I don’t have any, but I love kids. One day, hopefully.” Mark glanced in her direction with a smile pulling at the corners of his lips. The look of longing in his eyes made her breath catch. She grabbed the counter to steady herself and willed the heat to stop traveling through her body.
“You know, my mommy wants to have more kids one day. Well, she says Lord willing, if she finds a husband. Maybe you a—”
