Trudy’s Lemon Meltaways
What better way to enjoy a taste of the Colorado sunshine than with these citrusy confections? Reminiscent of long summer days and lazy afternoons, the combination of lemon and vanilla is sure to bring a smile to your face. And who knows? Maybe they’ll inspire you to have a few adventures of your own.
Ingredients
1 ¾ cup flour
2 Tbsp cornstarch
¼ tsp salt
1 cup powdered sugar
¾ cup butter, room temp
zest of ½ lemon
1 Tbsp lemon juice
1 tsp vanilla extract
For the Icing
1 cup powdered sugar
1 Tbsp lemon juice
zest of ½ lemon
pinch of salt
In a medium-sized bowl, whisk together the flour, cornstarch, and salt, and set aside. In a stand mixer, combine powdered sugar, butter, and lemon zest and whip until pale and fluffy, 1-2 minutes. Mix in lemon juice and vanilla. Add in the flour mixture and combine. Once the cookie dough is completely mixed, turn out onto a piece of plastic wrap and shape into a log, 1 ½ – 2 inches in width. Wrap dough tightly in the plastic wrap and chill in the fridge for at least one hour.
When ready to bake, preheat the oven to 350 degrees F and line a baking sheet with parchment paper. Unwrap the dough and slice into round disks. Bake cookies 11-15 minutes, or until the edges appear slightly golden along the edges.
In a small bowl, combine powdered sugar, lemon zest, and lemon juice. Add more lemon juice or water if the icing seems too thick. Set aside and allow cookies to cool before icing. Once the cookies are cool to the touch, spoon the glaze into the center of each cookie and spread in a circle toward the edges.
