A Healthier Key Lime Pie—and Super-Easy to Make
Ingredients:
2 eggs
2 egg whites
½ cup Key Lime Juice (find this with your other bottled juices in a fake lime shape)
1 ½ teaspoon grated lime zest (regular lime—add more)
1 can (14 ounce) low-fat sweetened condense milk
1 graham cracker crust
1 ½ cups low-fat whipped topping (Or if you think it’s worth calories—and we do—whipping cream)
Lime slices, for garnish
Directions:
- Preheat the oven to 350 degrees.
- Beat the eggs and egg whites with a whisk or a mixer until well-blended. Stir in the juice, zest (or not, my husband doesn’t like the zest), and milk and beat until well-blended.
- Pour the mixture into the crust. Bake on the center rack for about 20 minutes, until the center is set but still wobbly (it will firm up as it cools). Allow the pie to cool on the counter, then cover with plastic wrap and refrigerate for at least 2 hours.
- Before eating, spread the whipped topping evenly over the filling. Garnish with lime slices if you’d like.
- Makes 8 slices; at 330 calories per slice.
