Cranberry Scones
Ingredients
1 3/4 c. all-purpose flour
4 t. baking powder
1/4 c. white sugar
5 T. unsalted butter
1/2 c. dried cranberries (or raisins)
1/2 c. milk
1/4 c. sour cream
1 egg
1 T milk
Directions
1. Preheat oven to 400 F (or 200 C).
2. Sift flour, baking powder, sugar and salt into large bowl. Cut in butter using fingers until it is in pea-size lumps. Stir in dried cranberries. Mix together 1/2 c. milk and sour cream in measuring cup. Pour all at once into dried ingredients, and stir gently until well mixed. (I use a dinner knife.) DO NOT OVER-STIR!
3. With floured hands, pat dough into balls 2-3″ across, depending on size you want. Place onto greased baking sheet and flatten lightly, with scones barely touching each other. Whisk egg and 1 T milk. Brush tops with mixture and let rest for 10 minutes.
4. Bake 10-15 minutes in preheated oven, until tops are golden brown (not deep brown). Break or slice apart and serve with clotted cream, butter and jam or marmalade, or eat plain.
Reheat leftover scones in aluminum foil in oven and split in half to eat as above, or toast.
Tattie and Mince Bree
Ingredients
Two large potatoes (tatties), chopped
One carrot, chopped
One neep (turnip), chopped (can eliminate)
One large onion, chopped
l t. salt (or to your taste)
2 beef bullion cubes
Directions
Put all in a large pot, cover with water, and bring to a boil. Simmer until vegetables are soft-about 40-45 minutes.
Serve with bread for dipping and enjoy. Even better the next day!
About Dianne: Dianne fell in love with writing at the age of five. Because her father was a barnstorming pilot, she was bitten early by the “flying bug” as well. She attended the University of California, Santa Barbara and met and married the man God had prepared for her—an aeronautical engineer. After their five children were in school, she burned the midnight oil and wrote three novels, all published by Zebra Press. When her husband died only three years after he retired, she felt drawn to visit the Outer Hebrides Isles of Scotland, where her husband’s clan (MacDonalds) and her own clan (Galbraiths) originated.
