Aunt Clara’s Homemade Chicken Pot Pie by Sherry Kyle
In my newly released historical romance, Watercolor Dreams, Aunt Clara attempts to teach Anna how to make chicken pot pie, Charles’s favorite meal. I know my husband loves to come home to a homemade dinner, and this is one of his favorites too.
What you need:
• 2 (9-inch) unbaked pie crusts
• 1 1/2 pounds chicken breast, cooked and cubed
• 1/2 cup chopped onion
• ½ tsp black pepper, ground
• ½ tsp salt
• ½ tsp thyme
• ½ tsp basil
• pinch of garlic powder
• 1/4 cup butter
• 1/4 cup flour
• 1 1/2 cups chicken broth
• ½ cup milk
• 3 medium carrots, peeled and sliced
• 2 medium potatoes, peeled and cubed
• ½ cup frozen peas, thawed
• 1 small can sliced mushrooms, drained
• 1 egg beaten
What you do:
1. Preheat oven to 375 degrees. Slightly bake the “bottom” pie crust for 5 minutes so that once filled, it won’t get soggy.
2. Cook sliced carrots and cubed potatoes in 2 inches of boiling water for 10 minutes. Drain and set aside.
3. Melt butter in a skillet. Add onions and sauté until translucent.
4. Stir in flour until combined. Slowly add chicken broth, thyme, salt and pepper. Stir in milk. Bring to a boil.
5. Continue stirring until sauce becomes thick and creamy, about two minutes. Add a pinch of garlic powder and ½ tsp. basil.
6. Add carrots and potatoes to the white sauce, as well as the mushrooms.
7. Add cooked chicken. Mix well.
8. Transfer mixture to the slightly baked piecrust. Top with second pie crust. Press the top and bottom piecrusts together with a fork if needed. Cut slits on the top and brush with the beaten egg.
9. Bake at 375 degrees for 25-30 minutes or until the piecrust is golden brown.
10. Let cool for 10 minutes.
11. Enjoy!
