Aunt Clara’s Homemade Chicken Pot Pie by Sherry Kyle
In my newly released historical romance, Watercolor Dreams, Aunt Clara attempts to teach Anna how to make chicken pot pie, Charles’s favorite meal. I know my husband loves to come home to a homemade dinner, and this is one of his favorites too.
What you need:
• 2 (9-inch) unbaked pie crusts
• 1 1/2 pounds chicken breast, cooked and cubed
• 1/2 cup chopped onion
• ½ tsp black pepper, ground
• ½ tsp salt
• ½ tsp thyme
• ½ tsp basil
• pinch of garlic powder
• 1/4 cup butter
• 1/4 cup flour
• 1 1/2 cups chicken broth
• ½ cup milk
• 3 medium carrots, peeled and sliced
• 2 medium potatoes, peeled and cubed
• ½ cup frozen peas, thawed
• 1 small can sliced mushrooms, drained
• 1 egg beaten
What you do:
1. Preheat oven to 375 degrees. Slightly bake the “bottom” pie crust for 5 minutes so that once filled, it won’t get soggy.
2. Cook sliced carrots and cubed potatoes in 2 inches of boiling water for 10 minutes. Drain and set aside.
3. Melt butter in a skillet. Add onions and sauté until translucent.
4. Stir in flour until combined. Slowly add chicken broth, thyme, salt and pepper. Stir in milk. Bring to a boil.
5. Continue stirring until sauce becomes thick and creamy, about two minutes. Add a pinch of garlic powder and ½ tsp. basil.
6. Add carrots and potatoes to the white sauce, as well as the mushrooms.
7. Add cooked chicken. Mix well.
8. Transfer mixture to the slightly baked piecrust. Top with second pie crust. Press the top and bottom piecrusts together with a fork if needed. Cut slits on the top and brush with the beaten egg.
9. Bake at 375 degrees for 25-30 minutes or until the piecrust is golden brown.
10. Let cool for 10 minutes.
11. Enjoy!

About the book – Watercolor Dreams:
He strolled into her painting . . . and into her heart.
It’s 1910 and Anna Lewis is praying that God will help her become a premier watercolor artist of the lush beaches of Carmel, California. When a man strides down the beach and stops to face the ocean, Anna sketches him into her painting. Was it a mistake? Anna thinks so when he tells her he doesn’t have spare change to purchase her work. Spare change indeed! But while she seeks God’s leading for her art career, she’d better keep her day job as nursemaid to two rambunctious boys.
The minute Charles Jordan walks away, he regrets criticizing the woman’s painting but as he told the artist, he’s just been jilted at the altar.
How will a secret from Charles’ past affect his chances of loving again? And how will Anna have the hope she needs when tragedy strikes and she must rely on the one man who crushed her spirit?

I do enjoy cooking. Once I figured out that recipes are really just guidelines and that they don’t have to be followed to the letter to make delicious food, it took the stress out and became something really fun.

I hate to cook, hate to bake, hate the kitchen. It’s not that I can’t cook, I turn out good food when forced to. But it frustrates me. I wish I liked to cook, that it was relaxing and fun, but it’s just not for me.

I do enjoy cooking but as I grow older I find that I really enjoy someone else’s cooking more and more, lol.

No I don’t like to cook. Being single, it’s easier and less wasteful not to cook. Your chicken pot pie sounds yummy! 🙂
I would love to read WATERCOLOR DREAMS.
